This is a simple yet delicious keto chocolate chip cookie recipe. These cookies have an almost perfect macro ratio for the keto diet. With over 70 percent of the calories coming from fat and only 3.5 net carbs, it's hard to go wrong with these cookies!
Pre-heat the oven to 350 degrees Fahrenheit. Line a baking sheet with a non-stick baking mat or parchment paper.
In a large mixing bowl mix sifted almond flour, pecan cookie pieces, swerve, salt, and baking powder.
In a separate mixing bowl mix melted butter, eggs/yolk, chocolate chips, and vanilla extract.
Mix wet ingredients and dry ingredients until you have formed a nice cookie dough.
Roll the dough into 10 evenly sized balls and place on a sheet pan lined with wax paper or a baking mat. Gently flatten them down with a fork into the shape that you desire.(I like to keep mine at about an inch tall)
Place into the oven for 15-17 minutes.
Take the cookies out of the oven and place them on a cooling rack until cool.
