Crust:

  • 1/2 cup almond flour
  • 1/2 cup pecan flour
  • 6 tbsp butter cubed
  • 1/4 cup Swerve Granular

Filling:

  • 1/2 cup Swerve Brown
  • 1/4 cup Swerve Granular
  • 7 tbsp butter
  • 2 eggs
  • 1/4 tspĀ  salt
  • 1 tbsp almond flour
  • 2 tbsp pecan cookie pieces
  • 2 1/2 cups chopped pecans
  • 1 1/2 tspĀ  vanilla extract

  1. Pre-heat oven to 350 degrees Fahrenheit.
  2. Next, mix all of the crust ingredients except for the butter in a mixing bowl.
  3. Cut the 6 tbsp of butter into 1-centimeter cubes a spread it over the dry ingredients. Using your hands knead the butter into the mix until you have a nice dough.
  4. Work dough evenly across the bottom of a square 9 by 13-inch cake pan. Place into oven for 15 minutes. Then place on a cooling rack.
  5. In a large mixing bowl, mix the Swerve Brown, Swerve granular and eggs until creamy. Add one cup of the chopped pecans, melted butter, almond flour, and vanilla extract and stir.
  6. Pour mixture on top of the pie crust and spread the remaining 1 1/2 cups of chopped pecans evenly across the top.
  7. Turn the oven down to 325 degrees Fahrenheit and place into the oven for 1 hour.

  8. Place on a cooling rack until cool.
  9. Slice into 12 squares and enjoy a keto pecan pie square!
