There are specific days of the year that make it tough to stick to a ketogenic diet. For me, Valentine’s Day is one of them. My wife and I share a love for celebration and a major sweet tooth, and chocolate is our ultimate kryptonite. For me, one of the first images that come to mind when I think “Valentine’s” is that delectable, juicy, chocolate-dipped strawberry — which is why I wanted to create an easy low-carb chocolate covered strawberry recipe that will melt your socks off (and your date’s).
Don’t get me wrong, I wouldn’t judge you for deciding to break your diet for Valentine’s Day. However, I am here to say that you can have some of your favorite treats without leaving your state of ketosis. Each low-carb chocolate covered strawberry contains just 1-3 net carbs. So you probably shouldn’t have a whole carton of them, but you can certainly enjoy one or two while sticking to a keto diet!

Ingredients
- One 3oz Lily’s milk chocolate bar
- One 4oz Lily’s dark chocolate baking bar
- 2 Tbsp coconut oil
- One package of strawberries
- 1/3 cup chopped nuts of your choice (optional)
- 1/3 cup unsweetened coconut flakes (optional)
Directions
- Chop both chocolate bars into small pieces for melting.
- Place the chopped chocolate and coconut oil in a heatproof bowl.
- Using a saucepan bring about 1 inch of water to a simmer and place your heatproof bowl on the mouth of the saucepan. Make sure the water does not touch the bottom of the bowl.
- Keeping the temperature low, stir the chocolate and coconut oil with a spatula until melted.
- Tilt the bowl sideways so there is enough depth to dip the strawberries.
- Dip the strawberries into the chocolate and, if desired, roll them in chopped nuts or coconut flakes.
- Place your berries on a baking sheet and let cool for a few minutes. Then place them in a container and store in the fridge until you’re ready for them!
