Vanilla ice cream has stood the test of time as the world’s favorite ice cream flavor, which is why I wanted to make sure my keto vanilla ice cream maker recipe would be the best around. I have tested out numerous recipes and most of them tasted great. However, many of these attempts were super complicated with far too many ingredients that just weren’t making the recipe any better.

I want all of my recipes to be as simple as possible without sacrificing quality or taste. Because of this belief, I decided to make this creamy keto vanilla ice cream maker recipe with only four ingredients! Though it does require an ice cream maker, this recipe is just about as easy as it gets.

To make this keto vanilla ice cream maker recipe as thick and creamy as possible, I like to use a lot of egg yolks. Egg yolks are great for thickening ice cream and making it softer and easier to scoop. In addition, the only liquid I use in this recipe is heavy whipping cream.

Most people will use a mixture of heavy whipping cream and almond milk in their keto ice cream recipes. However, by using only whipping cream, I am able to add a bunch of fat content to this keto vanilla ice cream maker recipe. In addition, heavy whipping cream is very low in carbs and also makes this recipe extra creamy.

Another trick I use to make this recipe extra smooth and creamy is that I use Swerve Confections Sweetener. Swerve Confectioners is basically a keto friendly version of powdered sugar. It is light and fluffy so you won’t experience a grainy texture in this low-carb ice cream!

Ingredients

  1. Five egg yolks and two whole eggs
  2. 3 cups of whipping cream
  3. 1 cup Swerve Confectioners Sweetener
  4. 2 Tbsp of vanilla extract

Directions

  1. First, place your ice cream churning bowl in the freezer the day before using to ensure it is properly chilled.
  2. In a saucepan, whisk 5 egg yolks, 2 whole eggs, and 1 cup Swerve Confectioners (adding 1/4 cup at a time). Whisk for two minutes.
  3. Next, add the remaining ingredients to the saucepan and place on the stovetop on low-medium heat stirring constantly.
  4. Continue to stir and bring the mixture up to 160 degrees Fahrenheit to ensure safety.
  5. After that, take the mixture off of the stovetop and allow to cool. Place in the fridge for a couple of hours until cool.
  6. Then, pour the mixture into your ice cream maker according to manufacturer’s instructions (usually about 25-40 minutes).
  7. By this time, your ice cream should have about the same consistency of soft serve.
  8. Enjoy some low-carb vanilla ice cream straight away or store it in a freezer-safe container for a few hours.
