Keto Peanut Butter Pie | Peanut Butter And Cream Cheese Filling

If you love peanut butter, then you are going to love this keto peanut butter pie! Made with a crunchy chocolate crust and a peanut butter cream cheese filling this recipe taste amazing. It is, After all, hard to beat the taste combination of peanut butter and chocolate.

For the crust, I use a mixture of pecan cookie pieces and almond flour. Pecans are lower in carbs than almonds are. So by doing a mixture, I can make the crust for this keto peanut butter and cream cheese pie very low in carbs. In addition, since pecans are also high-fat, this peanut butter pie crust is extra keto friendly.

In addition to the flour, I use 1/4 cup of cocoa, butter, and Swerve for my this keto peanut butter pie crust. The cocoa adds a great chocolate flavor that complements the peanut butter filling perfectly. After all, everybody knows peanut butter and chocolate go together!

The butter, of course, adds to the taste and holds the crust together. To complete the crust I lightly sweetened it with Swerve Granular Sweetener. Swerve is a keto friendly sweetener that does not impact blood sugars.

For the pie filling, I used a mix of heavy whipping cream, cream cheese, Swerve, and of course, peanut butter. All of these keto friendly ingredients go perfect together and make for an amazingly cream keto peanut butter pie filling!

This keto peanut butter pie recipe yields a total of 12 servings. Each serving contains roughly 322.5 calories, 30.47 grams of fat, and only 3.95 grams of net carbs. I equated the net carbs by subtracting fiber and erythritol from total carbs.

Keto Peanut Butter Pie Ingredients

Crust:

  1.  1 cup pecan cookie pieces
  2. 3/4 cup almond flour
  3. 4 oz butter melted
  4. 5 tbsp Swerve Sweetener Granular
  5. 1/4 cup cocoa powder

Filling:

  1. 1/3 cup whipped cream
  2. 4 oz cream cheese softened
  3. 3/4 cup Kirkland organic creamy peanut butter or Perfect Keto Nut Butter 
  4. 1/2 cup Swerve Sweetener Granular

Directions

  1. Crust:  Mix all of the crust ingredients together in a pie pan. Using a rubber spatula or hands, press crust evenly across the surface and edges of the pie pan.
  2. Next, bake the crust for 12 minutes at 350 degrees Fahrenheit. Take the crust out of the oven and place on a cooling rack until cool.
  3. Filling: whip up the whipping cream until light and fluffy. Then add the remaining ingredients and continue to mix for about 2 minutes. The filling should be well mixed and creamy.
  4. After that, pour the filling on top of the pie crust and smooth it out evenly with a rubber spatula. Then chill for about 4 hours.
  5. Last, enjoy a slice of low-carb peanut butter pie!

 

How To Make This Keto Peanut Butter Pie More Keto Friendly

There are a few ways you could make this keto peanut butter pie more keto friendly. For starters, you can substitute peanut butter for Perfect Keto Nut Butter. Perfect keto nut butter is made with a mix of different nuts, coconut butter, MCT oil, and a few other keto approved ingredients.

Though this might not cut the carbs too drastically, many people like to avoid peanut in their diet. That said, Perfect Keto Nut Butter is a great substitute for peanut butter. Likewise, you could replace the peanut butter in this recipe with any nut butter. Just make sure to choose a nut with the lowest amount of carbs like pecan or macadamia nut.

You can also replace the almond flour in this recipe with pecan flour. Like I previously stated, pecans contain fewer carbs than almonds do. In fact, pecan flour has less than half the net carbs that almond flour does. It tastes great as well and is great for keto baking.

You can make any nut flour you like with some basic kitchen gadgets such as a food processor or blender. Simply grind the nuts down to a flour consistency. Just be careful not to overdo this or you will end up with nut butter instead. That said, you can also make nut butter with any nut you like as well. So no worries if you don’t want to use peanut butter in this keto peanut butter pie recipe. Simply replace the peanuts with your nut of your choice.
