After many failed attempts, I finally have a recipe for keto peanut butter cookies that I’m proud of. Don’t get me wrong, some of my other attempts were good but just not quite good enough to post on the blog. In the past, I would have the problem of my cookie tasting a bit ‘off’ or the texture just not holding up. Thankfully, I found a way to fix these two problems.
First, by adding pecan cookie pieces to the recipe and reducing the amount of sweetener used, I was able to completely reinvent both the taste and texture of my cookie. Next, instead of trying to shape them on a cookie sheet, I decided to try cooking them in a muffin pan. By using the muffin pan, I was able to shape my cookies and give them the space to rise for great consistency.
As you have probably noticed, I use pecan cookie pieces in many of my recipes. The reason for this is because pecans are low in net carbs — just 4 net carbs per 100 grams! Almonds, on the other hand, have about 10 net carbs per 100 grams. By mixing almond flour and pecan bits, I am able to make my recipes even lower in net carbs than many other keto dessert recipes would be.
This Keto peanut butter cookie recipe yields a total of 12 cookies. Each cookie contains roughly 320 calories, 30.12 grams of fat, and only 2.56 grams of net carbs, making them a great way to get a bit of extra fat into your diet without the carbs!

- 1 cup pecan cookie pieces
- 1 cup almond flour
- 4 oz melted butter
- 1/3 cup Swerve Sweetener
- 9 oz or about 3/4 cup Maranatha no salt/no sugar added peanut butter
- 1/2 Tsp sea salt
Directions
- Pre-heat oven to 325 degrees Fahrenheit.
- Pour pecan cookie pieces, almond flour, Swerve, and salt into a mixing bowl. Mix together, making sure to break up any clumps of almond flour.
- Next, pour in melted butter and mix well with a rubber spatula. Then, stir in peanut butter.
- Scoop mixture evenly into a 12 cup muffin pan and bake at 325 degrees Fahrenheit for 15 minutes.
- Place on a cooling rack until completely cool.
