Keto mug cake is a very popular keto dessert option, mostly because it is easy and quick to make. Unfortunately, most keto chocolate mug cake recipes I’ve tried have come out bland and dry. Thankfully my recipe didn’t have that problem, though there was still something missing after my initial test run.
While most keto mug cake recipes call for whipped cream as the topping, I decided to mix it up by creating a moist, delicious keto vanilla cream cheese frosting for my mug cake.
Don’t get me wrong, my cake tastes great by itself, but the frosting is definitely worth the time. It adds a lot of extra flavor and moisture that you might not find in a typical keto mug cake recipe. This recipe yields two servings and each contains about 380 calories, 39 grams of fat, and just over 4 net carbs. The nutrition was calculated without the collagen powder. Hope you enjoy!
Ingredients
Cake
- 1 egg
- 2 tbsp butter
- 3 tbsp almond flour
- 2 tbsp cocoa powder
- 2 tbsp Swerve Sweetener
- 1/4 Tsp vanilla extract
- 1/2 Tsp baking powder
- 1 scoop Perfect Keto Chocolate Collagen ( optional )
Cream Cheese Frosting
- 2 oz softened cream cheese
- 1 tbsp softened butter
- 3 tbsp Swerve Confectioners
- 1/2 Tsp vanilla extract
Directions
- Melt 2 tbsp of butter in a large microwaveable mug for 30 seconds. I like mugs that are short and wide so that the cake is spread out over a larger surface ( I used this one )
- Add the remaining cake ingredients to the mug and mix well.
- Microwave for 90 seconds.
- Let the mug cake cool while you make the frosting.
- For the frosting simply place all the ingredients in a mixing bowl and mix well until you have a nice creamy texture.
- Spread the frosting over the top of the mug cake and place in the fridge until it has reached the desired temperature.
