Ingredients

  1. 1/2 cup almond flour
  2. 1/4 cup pecan cookie pieces
  3. 1/4 cup Swerve Granular 
  4. 4 Tbsp butter melted
  5. 1 egg
  6. 4 Tbsp unsweetened cocoa powder
  7. 1/3 Lily’s chocolate chips
  8. 1/4 cup chopped almonds or walnuts ( nutrition is equated with pecans )
  9. 1 Tsp vanilla extract
  10. 3/4 Tsp baking powder
  11. pinch of salt

Directions

  1. Pre-heat the oven to 350 degrees Fahrenheit. Line a baking sheet with a non-stick baking mat or parchment paper.
  2. In a large mixing bowl mix sifted almond flour, unsweetened cocoa powder, pecan cookie pieces, swerve, salt, and baking powder.
  3. In a separate mixing bowl mix melted butter, egg, chocolate chips, and vanilla extract.
  4. Mix wet ingredients and dry ingredients until you have formed a cookie dough.
  5. Roll the dough into 6 evenly sized balls and place on a sheet pan lined with wax paper or a baking mat. Gently flatten them down with a fork into the shape that you desire. (I like to keep mine at about an inch tall)
  6. Place in the oven for 15-17 minutes.
  7.  Take the cookies out of the oven and place them on a cooling rack until cool.
