This keto chocolate chip macadamia nut cookie recipe is the 3rd keto cookie recipe I have made this week. You could say I have been on a bit of a keto cookie kick lately. In my opinion, keto cookies are some of the hardest keto dessert recipes to get just right. There are so many variables to consider, such as taste, texture, and moisture, just to name a few.

Specifically, it is harder to mask the cooling effect of erythritol with cookies the same way you can with other keto desserts like cheesecake. The high-fat content and moisture of the cream cheese does a great job of negating the cooling sensation of sugar alcohols.

As you have probably noticed, I have been using cream cheese in all of my recent keto cookies recipes. This has helped not only mask the cooling effect but has also helped keep my cookies soft and moist. These keto chocolate chip macadamia nut cookies are no exception. The added cream cheese makes these keto chocolate chip macadamia nut cookies extra soft and tasty.

These incredibly moist and delicious cookies are certainly a contender for my favorite keto cookie. They are basically the same recipe as my chewy chocolate chip cookies but they are loaded with keto friendly macadamia nuts. If you didn’t already know, macadamia nuts are some of the highest fat and lowest carb nuts on the market.

Not only are macadamia nuts high in fats, but the majority of the fat is from heart-healthy monounsaturated fat! In fact, an estimated 78-86 percent of the fats from macadamia nuts come in the form of monounsaturated fats.

In addition, macadamia nuts are loaded with other vitamins and nutrients. That said, these keto chocolate chip macadamia nut cookies come packed with nutrition!

Keto Chocolate Chip Macadamia Nut Cookies Ingredients

  1. 4 tbsp butter at room temp
  2. 1.5 oz cream cheese at room temp
  3. 4 tbsp Swerve Confectioners
  4. 2/3 cup almond flour
  5. 1/3 cup pecan flour
  6. 1/4 cup Lily’s Chocolate Chips
  7. 30 grams macadamia nut chopped
  8. 1 egg
  9. 1/2 tsp baking powder
  10. 1/2 tsp vanilla extract

COOKING DIRECTIONS

  1. In a mixing bowl mix butter and Swerve Confectioners using a handheld or standing mixer until smooth.
  2. Continue to mix as you add cream cheese, egg, and vanilla extract.
  3. In a separate mixing bowl mix almond flour, pecan flour, and baking powder together breaking up any clumps.
  4. Slowing mix dry and wet ingredients together until well mixed. Then, work in Lily’s Chocolate Chips and macadamia nuts.
  5. Place in the fridge for at least 30 minutes
  6. Pre-heat the oven to 325 degrees Fahrenheit.
  7. Take the cookie dough out of the fridge and roll into 6 even balls.
  8.  Line the 6 dough balls onto a cookie sheet lined with parchment paper or a silicone baking mat and press them down into the shape of a cookie.
  9. Place in the oven and bake for 18-22 minutes.
  10. Take out of the oven and place on a cooling rack.
  11. Last, enjoy some soft and keto chocolate chip macadamia nut cookies!
