Only a fool would start a keto dessert recipe blog without an awesome keto chocolate chip cookie recipe. Being the most popular dessert in America, I knew my chocolate chip cookie had to be top of the line.
The question I had to ask myself was this–how do I make a keto chocolate chip cookie that is moist, yet still has a nice cookie crunch? By adding a half cup of pecan cookie pieces to my flour mix I was able to achieve the perfect balance. It all came together and I couldn’t be happier with the results.
These cookies are not only moist, crunchy, and delicious, but they’re super filling, too. In fact, these cookies are not only a tasty dessert but work as a quick breakfast or on-the-go snack option as well.
Each keto chocolate chip cookie contains about 220 calories, 5g of protein, 17g of fat, and only 3.5 grams of net carbs. With over 70 percent of the calories coming from fat, they make a perfect keto cookie! Ingredients
- 1 cup almond flour
- 1/2 cup pecan cookie pieces or bits
- 1/2 cup Swerve Granular
- 1/3 cup butter
- 1 egg + 1 egg yolk
- 2/3 cup lily’s chocolate chips
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 tsp vanilla extract
Directions
- Pre-heat the oven to 350 degrees Fahrenheit. Line a baking sheet with a non-stick baking mat or parchment paper.
- In a large mixing bowl mix sifted almond flour, pecan cookie pieces, swerve, salt, and baking powder.
- In a separate mixing bowl mix melted butter, eggs/yolk, chocolate chips, and vanilla extract.
- Mix wet ingredients and dry ingredients until you have formed a nice cookie dough.
- Roll the dough into 10 evenly sized balls and place on a sheet pan lined with wax paper or a baking mat. Gently flatten them down with a fork into the shape that you desire.(I like to keep mine at about an inch tall)
- Place in the oven for 15-17 minutes.
- Take the cookies out of the oven and place them on a cooling rack until cool.
- Voila! You now have keto chocolate chip cookies!
