Easy Keto Brownie Mug Cake Recipe | Ready In 5 Minutes

This keto brownie mug cake is the perfect treat when you need a keto dessert fast. In fact, this recipe can be made in under 5 minutes! This mug cake is quite large so it is broken down into two servings. In addition, the nutritional information is calculated without the collagen powder.

Brownies are one of my favorite desserts. The main problem with brownies, however, is that traditional brownies are loaded with sugar and white flour. These two ingredients are probably the two least keto friendly ingredients you can buy. Thankfully, however, this keto brownie mug cake is made without sugar or wheat flour.

Instead, I use almond flour and sweeten it with Swerve Sweetener! Almond flour has a fraction of the net carbs you will find in your typical wheat flour. In fact, 1/4 of a cup of almond flour contains just 3 net carbs. Wheat flour, on the other hand, contains around 18 grams of net carbs.

Unlike white sugar which is essentially pure carb, Swerve Sweetener contains zero net carbs per serving. By simply switching out those two ingredients and you have a keto brownie mug cake that is keto friendly.

The other problem with most brownie recipes including keto brownies is that the recipes are simply too large. It is pretty common to be the only person in your household following a ketogenic diet. That said, there is seldom a need to make a whole batch of keto brownies.

Thankfully this keto brownie mug cake yields only two servings.  Each serving contains roughly 383 calories, 38 grams of fat, 17 grams of total carbs, and about 5.25 net carbs. Net carbs equated by subtracting fiber and erythritol from totals carbs.

How To Make This Keto Brownie Mug Cake Even Lower In Carbs

If you want to make this keto brownie mug cake, even more, keto friendly, then you can even substitute the almond flour for pecan flour. In fact, the only reason I use almond flour in this recipe is that it is easier to find in grocery stores and is much cheaper.

However, if you can swing it, pecan flour has only 1 net carb per serving! You can find it online and it is pretty easy to make at home as well. Since this recipe already calls for pecan cookie pieces, you can easily make some pecan flour at home. Simply grind down the pecan pieces down into a fine flour using a high-quality blender or food processor.

Though I always think of brownies with walnuts, you can also replace the walnut in this recipe for chopped pecans as well. Pecans are also much lower in net carbs than walnuts. In fact, 100 grams of pecans contains 4 net carbs, whereas 100 grams of walnuts contain 7 net carbs. By making these two changes you can get each serving of this keto brownie mug cake down to 4.13 net carbs per serving.

  1. 3 Tbsp almond flour
  2. 2 Tbsp cocoa powder
  3.  3 Tbsp butter
  4. 2 Tbsp Swerve Sweetener
  5. 1 Egg
  6. 2 Tbsp pecan cookie pieces
  7. 2 Tbsp Lily’s no sugar added chocolate chips (about 25 g)
  8. 1/2 Tsp vanilla extract
  9. 1/2 Tsp baking powder
  10.   15 grams chopped walnuts
  11.  1 scoop Perfect Keto Chocolate Collagen ( optional )

Directions

  1. First, melt your butter in a wide microwave-safe mug for 30 seconds.
  2. Next mix the Swerve Sweetener in with the butter.
  3. After that, pour the remaining ingredients into the mug and mix with a spoon.
  4. Then, put into the microwave for 2 minutes.
  5. Let your keto brownie mug cake cool down a bit and enjoy. This recipe is even better when topped with a scoop of my keto vanilla ice cream!
