This keto blackberry cobbler came out much better than expected. In fact, I strongly questioned whether or not I could pull off a keto-friendly cobbler recipe at all. Since cobbler recipes rely heavily on high-sugar fruits, this recipe was no easy task. Thankfully, however, blackberries contain very little sugar when compared to other fruit like peaches and apples.

In fact, most berries make a great keto snack when enjoyed moderately. For example, a 6oz package of blackberries contains only 14 total carbs with 8 grams of fiber, according to my fitness pal. This makes them the perfect fruit for a low-carb cobbler recipe.

Though it took me a couple of attempts, this keto blackberry cobbler finally came out just right. The buttery crust, sweetener, and tart blackberries really came together and made one amazing keto dessert.

To make this recipe even better, try it topped with a scoop of keto vanilla ice cream. This keto blackberry cobbler recipe yields a total of  10 servings. Each serving contains roughly 278.6 calories, 26.72 grams of fat, 5.29 grams of protein, 8.06 grams of total carbs, and 3.7 grams of fiber.   1. 5 Tbsp melted butter
  2. 1 1/2 cups of almond flour
  3. 1 cup Swerve Confectioners
  4. 8 oz of heavy whipping cream
  5. 4 oz cream cheese at room temp
  6. 12 oz fresh blackberries
  7. 2 Tbsp Swerve Granular

Directions

  1. Pre-heat oven to 350 degrees Fahrenheit.
  2. Next, place all ingredients except blackberries and 2 Tbsp of Swerve Granular into blender. Blend on high for about 90 seconds.
  3. Then, pour mixture evenly across a 9×13 non-stick baking pan. Press blackberries evenly into batter.
  4. Then, sprinkle Swerve Granular evenly across the top and place into preheated oven for 40-45 minutes or until sides are golden brown.
  5. Take your cobbler out of the oven and place on a cooling rack.
  6. Last, enjoy a slice of keto blackberry cobbler!
