These keto peanut butter chocolate chip cookies are unbelievably tasty. Instead of debating what is better between chocolate chip cookies or peanut butter cookies, I say why not just combine them? If you ask me, one of the greatest flavor combinations of all time has to be peanut butter and chocolate.

Unfortunately, some of the best chocolate and peanut butter treats out there like Reese’s Peanut Butter Cups will send you flying out of ketosis. Hopefully, however, these low-carb and high-fat keto peanut butter chocolate chip cookies will satisfy your cravings without having to compromise your diet.

Like many of my recipes, these keto peanut butter chocolate chip cookies are made with a combination of almond and pecan flour. I love using this combo because pecan flour contains significantly fewer carbs than almond flour does. In fact, 1/4 cup of pecan flour contains only about 1 net carb, whereas almond flour contains closer to 3 net carbs per 1/4 cup.

Why not just use all pecan flour then? Well the main reason I combine them is that pecan flour is also significantly more expensive than almond flour. In addition, it can be harder to find at your local grocery store. Thankfully, it is available online through Amazon and is easy to make with de-shelled pecans.

All you’ll need are regular pecan pieces and a food processor or high-quality blender. Simply place regular deshelled pecans or pecan pieces through a food processor until it turns into a nice pecan flour. But be aware, if you process for too long your mixture will turn into pecan butter.

In addition, I also use a small amount of cream cheese in this chewy keto peanut butter chocolate chip cookie recipe. I have found that cream cheese helps to keep these low-carb cookies soft and moist. Which can be a common problem in keto baking.

Chewy Keto Peanut Butter Chocolate Chip Cookie Ingredients

  1. 4 tbsp butter softened
  2. 1.5 oz cream cheese softened
  3. 1/4 cup Swerve Confectioners
  4. 2/3 cup almond flour
  5. 1/3 cup pecan flour
  6. 1 egg
  7. 1/3 cup peanut butter no sugar added
  8. 1/4 cup Lily’s chocolate chips
  9. 1/2 tsp baking powder
  10. 1/2 tsp vanilla extract

Directions

  1. Mix butter and Swerve Confectioners in a mixing bowl using a handheld or standing mixer until smooth.
  2. Continue to mix as you add peanut butter, cream cheese, egg, and vanilla extract.
  3. In a  bowl mix almond flour, pecan flour, and baking powder.
  4. Slowly mix dry and wet ingredients together until well mixed.
  5. Mix in Lily’s Chocolate Chips.
  6. Place in the fridge for at least 30 minutes.
  7. Pre-heat the oven to 325 degrees Fahrenheit.
  8. Take the cookie dough out of the fridge and roll into 6 even balls.
  9.  Line the 6-8 dough balls onto a cookie sheet lined with parchment paper or baking mat and press them down into the shape of a cookie.
  10. Cover with aluminum foil.
  11. Place in the oven and bake for 25 minutes.
  12. Take off aluminum foil and cook for another 5-10 minutes.
  13. Take out of the oven and place on a cooling rack.
  14. Last, enjoy a soft and chewy peanut butter chocolate chip cookie!
