When it comes to cookies, there are two types of people. Those who prefer crunchy cookies and those who prefer chewy cookies. Unfortunately, finding a keto-friendly cookie with a soft and chewy texture can be hard to come by. Thankfully, however, these chewy keto chocolate chip cookies came out just right for that chewy cookie lover out there. (I’m team crunch, but even I loved these cookies!)

Choosing a keto-friendly flour mix and adding a bit of cream cheese is the key to chewy low-carb chocolate chip cookies. On their own nut flours are much denser than wheat flour, making it much harder to make soft and chewy keto desserts. Thankfully, this problem is fixed with the addition of cream cheese. The cream cheese helps to keep these keto chocolate chip cookies soft and moist.

This recipe yields a total of 6 servings or cookies. Each cookie contains roughly 230 calories, 22.82 grams of fat, 15.67 total carbs, 2.65 net carbs, and 4 grams of protein.

Chewy Keto Chocolate Chip Cookie Ingredients

  1. 4 tbsp butter at room temp
  2. 1.5 oz cream cheese at room temp
  3. 4 tbsp Swerve Confectioners
  4. 2/3 cup almond flour
  5. 1/3 cup pecan flour
  6. 1/4 cup Lily’s Chocolate Chips
  7. 1 egg
  8. 1/2 tsp baking powder
  9. 1/2 tsp vanilla extract

Cooking Directions

  1. In a mixing bowl mix butter and Swerve Confectioners using a handheld or standing mixer until smooth.
  2. Continue to mix as you add cream cheese, egg, and vanilla extract.
  3. In a separate mixing bowl mix almond flour, pecan flour, and baking powder together breaking up any clumps.
  4. Slowing mix dry and wet ingredients together until well mixed. Then work in Lily’s Chocolate Chips.
  5. Place in the fridge for at least 30 minutes
  6. Pre-heat the oven to 325 degrees Fahrenheit.
  7. Take the cookie dough out of the fridge and roll into 6 even balls.
  8.  Line the 6 dough balls onto a cookie sheet lined with parchment paper or a silicone baking mat and press them down into the shape of a cookie.
  9. Place in the oven and bake for 18-22 minutes.
  10. Take out of the oven and place on a cooling rack.
